Sushi

2 cp Rice
2 1/2 cp cool water
3 leaves of nori
1 med. cucumber
1 stick of artificial crab
Cream cheese
Soy Sause 
Wasabi

Rice
1.    Put the rice in a pan with cool water rinse then repeat 3 times
2.    Then let is soak for at least 30 mins or until the rice turns white.  
3.    After that rinse the rice and add 2 ½ cups of water in the pan.  Bring to a boil one high heat.  Once to a boil turn on low for 20 mins.  
4.    Once the rice is done quickly remove from pan and add your rice vinegar.  Let it completely cools before using.  

While the rice is cooking prepare the filling
5.    Take your cucumber and cut it to the width of your nori.  Then cut the cucumber in to fourths in the shape of spears.  Take the seeds out divide them one more time so you are left we 8 cucumber spears.  
6.    Take a wet knife and cut the cream cheese in to stripes about half the width of the cucumber spears but the same length.  
7.    Pull the imitation crab and pull apart till it is as fine as you want.  Putting a little mayo with the imitation crab reduces the sweetness and make is taste a little better. (optional)

Assembly 
8.    Take your sushi mat and put saranwrap on it.  
9.    Spread rice on nori about 1 or 2 grains thick.  
10.    Them flip over and add the cucumber crab and cream cheese.  
11.    Then roll and cut the roll in half then in to forth and eighths
Tip: To cut the sushi roll take a serrated knife and some water.  Gently saw and dip in water when it starts to stick to the rice
